I love summer because I’m obsessed with ice crearm! I’ve loved ice cream ever since I can remember. I love vegan, keto, paleo and vegetarian ice creams. I only make dairy-free and sugar-free ice creams due to all of my food allergies. You’ll need an ice cream maker for this simple recipe.
Ingredients
- ▢1 can full fat coconut milk
- ▢1/2 tablespoon gelatin
- ▢1 tsp vanilla
- ▢ 1/8 – 1/4 tsp stevia extract
Instructions
- In a medium sauce pan, on medium high heat, pour in coconut milk. Let it heat up and come to a simmer.
- Prinkle in gelatin and immediately stir until it is completely incorporated (no chuncks).
- Bring to a gentle boil 3 minutes. Set aside to cool. (*You can put the mixture in a heat safe contain in the refrigerateor to accellerate the cooling process).
- Once the mixture is completely cool. Pour into your ice cream machine and set it to either soft serve or hard ice cream according to the manufacturer’s instructions.
- Once it’s done, you can serve immediately or store in a freezer safe container, up to 1 week.
- Feel free to add your favorite topping.
