How To Make Gluten-Free Gingerbread Peach Cobbler

I say this about all my desserts. This is my new favorite!

What You’ll Need:

1 ½ cups almond flour

1/8 -1/4 tsp stevia

1 –  1 ½  teaspoon ground ginger

1 teaspoon cinnamon

¼ teaspoon ground allspice

½ teaspoon salt

1/4 cup avocado oil

1 tablespoon molasses

2 tablespoons cold water

What You’ll Do Next:

1. Sift together the flour, sugar, spices, salt, into a bowl large enough for all the dry ingredients.

2. Add the oil one tablespoon at a time, cutting it into the dry mixture. You can use a fork or your fingers.

3. Drizzle both the molasses and water over the dough, now mixing with your fingers until the dough begins to come together.

4. Set your dough off to the side and start working on your peaches.

The Filling

  • 4 cups sliced and mostly thawed frozen peaches, or fresh peaches sliced and peeled.
  • 1/8 – 1/4 tsp stevia
  • 1 tablespoon arrowroot
  • 1/2 tsp cinnamon

Putting It Togther

Pre-heat your oven at 350 degrees

Pour your peach mixture into your a 9 inch pie tin or baking dish.

Sprinkle your the dough over the top (with your fingers)

Bake for 25 minutes or until the peach mixture begins to bubble.
