Fun Food Friday – Lemon Coconut “Crack” Bars

Southern California has been so hot the past week, so finding a no bake frozen dessert was high on my to do list. Luckily, on my endless quest for healthy, high fiber, nutrient dense treats. I found another absolutely delicious non-dairy, gluten free & plant based treat that’s rich, filling and super easy to make. Yay! I took the original recipe, optimized it with my own personal twist and ta-da, it mind blowing! It has a “crack like” effect on your taste buds and satisfies your sweet tooth. Give it a try you won’t be disappointed.

Ingredients:

3 cups unsweetened shredded coconut

1-2 tbsp lemon rind, chopped

2 tbsp lemon juice (optional)

1/3 cup coconut oil

3/4 cup date syrup

Instructions

In a large mixing bowl, combine all your ingredients and mix well. 

Line an 8 x 8-inch pan with parchment paper. Pour the batter into the pan and use your fingers to firmly pack the batter into place.

Place the tray in the freezer. 

15-20 minutes later remove your tray from the freezer.

Using a slightly wet knife to cut into the block and carve out your bars.
