How To Make A Healthy Chicken Enchilada

This is, by far, one of my most popular meal prep dishes. My clients looooove this one! The secret to a healthy enchilada is the sauce, chicken and the tortilla. In this case, I used chicken breasts, for my filling. As you can see, from the picture above and below, I used cabbage to replace the flour tortilla. The enchilada sauce is homemade.

Why did I using cabbage? Cabbage is great for weight-loss and supports a heart healthy, anti-inflammatory life-style. Did I mention cabbage is loaded with essential vitamins and minerals to help boost digestion, muscle recovery & joint health? Making this vegetable an ideal meal prep ingredient for any fit-minded women.

Why boneless chicken breasts? That’s simple, white meat is low in fat. Super easy to pull apart and shred, after it has been cooked in a pressure cooker.

Why homemade enchilada sauce? As a cyclical ketogentic, lectin-free personal trainer and meal prepper, I’m always looking for ways to eliminate excess sugar in the foods that I eat and meals I prepare for my clients. I love savory sauces and healthy dressing that don’t contain preservatives and/or sugar. It’s almost impossible to find store bought sauces that are free of these”fillers”. So I make mine from scratch.
