What a blast to make and even more fun to eat!!
What You’ll Need:
| Raspberry Sauce |
1 ½ cups raspberries, fresh or frozen
1 tbsp lemon juice
⅛ tsp stevia
1/2 tbsp grass-fed gelatin
½ cup water
| ICE CREAM BASE |
2 ½ cups coconut milk, room temp
¾ Tbsp grass-fed gelatin
1 (4-ounce) package crumbled goat cheese or 1/2 package of block of cream cheese, room temperature
¼ tsp stevia
¼ tsp salt
1 tbsp FRESH lemon juice
1 tsp pure vanilla extract
What You’ll Do Next:
| RASPBERRY SAUCE |
1. In a small saucepan, combine water & gelatin (let it blossom for 5 minutes)
2. With heat on high, whisk water and gelatin. Bring to a boil. Mix until gelatin melts completely and mixture is smooth.
3. With heat on low, stir in raspberries , lemon juice and stevia.
4. With a fork, SLIGHTLY mash some berries (not all of them).
5. Reduce heat & simmer, uncovered, for another 1-2 minutes. If using frozen berries, make sure all your berries are thawed.
6. Set aside.
7. Cover & refrigerate until completely chilled (1-2 hours). Once cooled the berry sauce will be slightly jelly-like.
| ICE CREAM BASE |
1. In a sauce pan blossom gelatin and coconut milk.
2. With heat on high, whisk coconut milk and gelatin. Bring to a boil. Mix until gelatin melts completely and mixture is smooth.
3. Set aside and cool (to accelerate the cooling process, put the mixture in the refrigerator for 2-3 hours).
4. Once cooled, in a blender, combine the cold coconut milk mixture (expect a very thick mixture) cream cheese, stevia, salt, lemon juice & vanilla. Blend on high until smooth.
5. Pour your ice cream base in to your ice cream maker. Follow the manufacturer’s instructions. Mine mixed for 30-35 mintues.
6. Once your ice cream’s ready, in a large bowl add your ice cream base & swirl in a heaping spoonful of the raspberry sauce.
7. Add another ¼ of the ice cream base on top of that, & swirl in another heaping spoonful of the raspberry sauce. Repeat until all the ice cream is in your bowl .
NOTE: You may have leftover the raspberry sauce.
8. Ready to eat.
