Summer is the perfect time to explore fruits of the season. They’re so many!! These summer the figs are ripe and abundant. My neighbor’s yard was over flowing with figs. She asked me if I would like a bunch? Of course I did. Who am I to say no. 🙂
This recipe is super simple and a joy to make. Especially if you’re a first timer, like me.
Ingredients
- 1 lb fresh figs
- 1/8 – 1/4Â Â tsp stevia
- 1/2 lemon squeezed
- 1/2 tsp vanilla extract
- 2 tbsp water
Instructions
- Cut the stems off the figs and discard.
- Cut the figs into quarters.
- Put all ingredients in a saucepan or pot and stir.
- Cook over medium heat, stirring, until the sugar is dissolved and the mixture is simmering.
- Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
- To make the fig jam smooth, optionally pulse it in the food processor until desired consistency.
Easy, Peasy and super tasty.
